Yes, you can cut meat and seafood on a wooden chopping board, particularly an end-grain one. Wood has natural antibacterial properties and you just need to clean the chopping board properly. A wooden board is gentler on knife blades and self-healing so cuts and grooves will fill in over time.

With regular oiling and careful washing, a quality wooden chopping board can last 10 years or more. If you see deep cracks, heavy warping or stains that do not fade after cleaning, you may want to replace it, as these can trap moisture and fish residues, and therefore harbour bacteria.

There is nothing to do when you receive your chopping board, it is ready to use. Just give it a quick rinse and you can use it straight away. Over time, your board might become a little dry, you can then maintain it by putting some Cloumann oil on it.

If you use a plastic chopping board or similar, you should use different chopping boards, as the cuts in the plastic board can have bacteria. For a wood chopping board, and in particular an end-grain one, this is less of an issue, as the wood is antibacterial.

Most professional kitchens use plastic or artifical material chopping board. As part of the Hazard Analysis Critical Control Point (HACCP) systems (food safety management systems for controlling food safety risks and hazards in the food industry), it is recommended that you use separate chopping boards for fish, meat and vegetables. If you do this, you should use a blue chopping board for raw fish, including shellfish.
Different restaurants in the UK use various systems for colour-coding their chopping boards. Food safety agencies in the country encourage using the coloured chopping board system, but there is no established food regulation for using them.
By using a hardwood chopping board from Cloumann, you avoid the biggest risks of bacteria growth, as wood in naturally antibacterial. You can therefore use just one chopping board for meat, fish and vegetables, as long as you wash it in the sink with soap in between the different types.
